Najv\u00e4\u010d\u0161\u00ed rozdiel v kone\u010dnom produkte je balenie a fyzik\u00e1lny stav. In\u00fdmi slovami, spracovanie by malo prebieha\u0165 v na\u0161ich vlastn\u00fdch kuchyniach, ke\u010f prid\u00e1vame mrkvu, kore\u0148ov\u00fa zeleninu, zeler, cibu\u013eu, cesnak, kapustu a v\u0161etko ostatn\u00e9, \u010do radi prid\u00e1vame do v\u00fdvaru s vo\u013ene chovan\u00fdm kur\u010da\u0165om. Okrem toho by sme mali jes\u0165 ve\u013ea \u010derstvej zeleniny bohatej na vl\u00e1kninu. M\u00e1lokto si v\u0161ak uvedomuje, \u017ee v\u00fd\u017eivov\u00e1 hodnota v\u0161etk\u00fdch na\u0161ich rastlinn\u00fdch a \u017eivo\u010d\u00ed\u0161nych potrav\u00edn v posledn\u00fdch desa\u0165ro\u010diach v\u00fdrazne klesla. To znamen\u00e1, \u017ee mrkva u\u017e nie je tak\u00e1 bohat\u00e1 na \u017eiviny a fytonutrienty ako v \u010dasoch na\u0161ich star\u00fdch rodi\u010dov. Niet divu, \u017ee v\u00fdvar u\u017e nie je tak\u00fd chutn\u00fd ako kedysi na stoloch na\u0161ich babi\u010diek.<\/p>\n\n\n\n<p>Na prv\u00fd poh\u013ead sa nezd\u00e1, \u017ee by sme trpeli hladom, preto\u017ee konzumujeme viac kal\u00f3ri\u00ed, ako potrebujeme. V d\u00f4sledku stravy s n\u00edzkou nutri\u010dnou hodnotou a vysok\u00fdm obsahom pr\u00e1zdnych kal\u00f3ri\u00ed telo nedost\u00e1va \u017eiviny, ktor\u00e9 potrebuje na spr\u00e1vne a zdrav\u00e9 fungovanie. V dlhodobom horizonte m\u00f4\u017ee nutri\u010dn\u00e9 hladovanie vies\u0165 k r\u00f4znym zdravotn\u00fdm probl\u00e9mom, ako je oslaben\u00fd imunitn\u00fd syst\u00e9m, chronick\u00e9 ochorenia, \u00fanava a poruchy v\u00fdvoja.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Dobr\u00e1 spr\u00e1va: d\u00f4raz sa pres\u00fava z kvantity na kvalitu v\u00fdroby<\/h2>\n\n\n\n<p>A&nbsp;<a href=\"https:\/\/tmg.hu\/sk\/\" target=\"_blank\" rel=\"noreferrer noopener\">Zdru\u017eenie po\u013enohospod\u00e1rov pre obnovu p\u00f4dy<\/a>&nbsp;tento rok&nbsp;<a href=\"https:\/\/mezohir.hu\/2025\/06\/17\/agrar-klimavaltozas-technologiai-valaszok-mezogazdasag\/\" target=\"_blank\" rel=\"noreferrer noopener\">Konferencia REAG<\/a>&nbsp;T\u00e9ma je \u201e<em>Jedno zdravie<\/em>\u201d, v ktorom vn\u00edmame p\u00f4du, rastliny, zvierat\u00e1 a \u013eud\u00ed ako vz\u00e1jomne interakt\u00edvny a \u00fazko prepojen\u00fd syst\u00e9m. Jeden z hlavn\u00fdch re\u010dn\u00edkov na konferencii&nbsp;<strong>Dan Kittredge<\/strong>, riadite\u013e Bionutrient Institute so s\u00eddlom v Massachusetts, ktor\u00fd n\u00e1m priniesol revolu\u010dn\u00e9 posolstvo: \u201eV\u00fd\u017eivov\u00e1 hodnota rastl\u00edn, t. j. ich nutri\u010dn\u00e1 hustota, nie je ur\u010den\u00e1 \u0161t\u00edtkami, ktor\u00e9 s\u00fa na nich umiestnen\u00e9, ale biologickou aktivitou p\u00f4dy. Potraviny pestovan\u00e9 v \u017eivej p\u00f4de maj\u00fa ove\u013ea vy\u0161\u0161iu fyziologick\u00fa hodnotu a m\u00f4\u017eu zohr\u00e1va\u0165 obrovsk\u00fa \u00falohu pri obnovovan\u00ed a udr\u017eiavan\u00ed n\u00e1\u0161ho zdravia.\u201d<\/p>\n\n\n\n<p>In\u0161tit\u00fat Bionutrient, pod veden\u00edm Dana Kittredgea&nbsp;<a href=\"https:\/\/www.bionutrientinstitute.org\/\" target=\"_blank\" rel=\"noreferrer noopener\">v\u00fdskum<\/a>&nbsp;poukazuj\u00fa na to, \u017ee nutri\u010dn\u00e1 hustota rastl\u00edn, t. j. koncentr\u00e1cia vitam\u00ednov, miner\u00e1lov a fytonutrientov, ktor\u00e9 obsahuj\u00fa, sa m\u00f4\u017ee v\u00fdrazne l\u00ed\u0161i\u0165 v z\u00e1vislosti od podmienok pestovania. Pri zbere \u00fadajov v roku 2020 sa pri sk\u00faman\u00ed tis\u00edcov vzoriek rastl\u00edn zistilo, \u017ee aj v r\u00e1mci rovnak\u00e9ho druhu rastl\u00edn m\u00f4\u017eu existova\u0165 rozdiely v obsahu miner\u00e1lov a\u017e 5-10-15-n\u00e1sobn\u00e9, v z\u00e1vislosti od odrody rastliny. Tieto rozdiely v obsahu mo\u017eno prip\u00edsa\u0165 pestovate\u013esk\u00fdm met\u00f3dam, zdraviu p\u00f4dy a mikrobi\u00e1lnej aktivite. Hustota \u017eiv\u00edn je d\u00f4le\u017eit\u00fd pojem, ktor\u00fd ur\u010duje nielen mno\u017estvo potrav\u00edn, ale aj ich skuto\u010dn\u00fa nutri\u010dn\u00fa hodnotu, \u010do z neho rob\u00ed k\u013e\u00fa\u010dov\u00fd faktor z h\u013eadiska zdravia.<\/p>\n\n\n\n<p>V\u00fdskumy preuk\u00e1zali, \u017ee obsah organick\u00fdch l\u00e1tok v p\u00f4de a mikrobi\u00e1lna aktivita s\u00fa pozit\u00edvne korelovan\u00e9 s hustotou \u017eiv\u00edn v rastlin\u00e1ch. V\u00fdsledky nazna\u010duj\u00fa, \u017ee konven\u010dn\u00e9 priemyseln\u00e9 po\u013enohospod\u00e1rstvo \u010dasto vedie k poklesu \u017eiv\u00edn, zatia\u013e \u010do zdrav\u00e1 p\u00f4da a regenerat\u00edvne po\u013enohospod\u00e1rske met\u00f3dy zlep\u0161uj\u00fa kvalitu \u00farody. In\u0161tit\u00fat Bionutrient Institute si kladie za cie\u013e vytvori\u0165 vedeck\u00fd z\u00e1klad pre meranie kvality potrav\u00edn a podporova\u0165 zv\u00fd\u0161enie hustoty \u017eiv\u00edn v glob\u00e1lnom potravinovom syst\u00e9me. To n\u00e1m v bud\u00facnosti umo\u017en\u00ed rie\u0161i\u0165 nielen kvantitat\u00edvny, ale aj kvalitat\u00edvny hlad.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u010co m\u00f4\u017eu po\u013enohospod\u00e1ri urobi\u0165, aby sa pripojili k tomuto glob\u00e1lnemu hnutiu a stali sa l\u00eddrami vo v\u00fdrobe vysoko kvalitn\u00fdch potrav\u00edn?<\/h2>\n\n\n\n<p>Po\u013enohospod\u00e1ri s\u00fa k\u013e\u00fa\u010dov\u00fdmi hr\u00e1\u010dmi v&nbsp;<a href=\"https:\/\/mezohir.hu\/2022\/10\/21\/agrar-talaj-talajegeszseg-mikroba-termoreteg-fenntarthato-mezogazdasag\/\" target=\"_blank\" rel=\"noreferrer noopener\">zdravie p\u00f4dy<\/a>&nbsp;ochrana a obnova, preto\u017ee ich \u010dinnos\u0165 m\u00e1 priamy vplyv na rovnov\u00e1hu ekosyst\u00e9mu a v\u00fd\u017eivov\u00fa hodnotu potrav\u00edn. Rastliny prostredn\u00edctvom svojich kore\u0148ov zdie\u013eaj\u00fa v\u00fdznamn\u00fa \u010das\u0165 cukrov vyprodukovan\u00fdch po\u010das fotosynt\u00e9zy s mikroorganizmami \u017eij\u00facimi v p\u00f4de, predov\u0161etk\u00fdm s bakt\u00e9riami a hubami. T\u00e1to symbi\u00f3za umo\u017e\u0148uje mikrobi\u00f3mu mobilizova\u0165 miner\u00e1ly v p\u00f4de a spr\u00edstupni\u0165 ich rastlin\u00e1m, \u010d\u00edm sa rastliny st\u00e1vaj\u00fa zdrav\u0161\u00edmi a bohat\u0161\u00edmi na \u017eiviny.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">V\u0161etko za\u010d\u00edna p\u00f4dou<\/h2>\n\n\n\n<p>Aby mikroorganizmy mohli spr\u00e1vne fungova\u0165, potrebuj\u00fa zdrav\u00fa, prevzdu\u0161nen\u00fa p\u00f4du, ktor\u00e1 je dostato\u010dne vlhk\u00e1 a bohat\u00e1 na humus.
